I can recommend "Les Plus Belles Ballades en Roussillon" autour de Perpignan, Prades, Ceret, Argelès... 40 itineraires pour baladeurs curieux.

This is a nicely illustrated book with descrptions, routes, etc. issued by the Office National des Forêts published by Pelican ISBN2842330072 written by Alain Cortat and Patrick Vacher.

It even takes in Llivia (the Spanish enclave within France, famous for its "golden bargains"!) It describes much of the flora and fauna (including such curiosities as the semi-wild "vache des Albères") of the various routes, together with points of interest such as beautiful villages, special ruins, dolmens, etc. Well worth acquiring at any good local bookshop and even in some "presse" shops at touristic locations.
FNAC sells it at €21,85.
