A bike shop in Paris would break it down to the extent necessary to fit in a box. Any number of shippers (FedEx, DHL, UPS...) would ship it. Though as Kate said, it might be easier and cheaper to bring it on the train on the assumption that you will be coming back from Paris yourself some time. SNCF also have a door-to-door baggage service: it's not clear, from the research I could be bothered to do, whether that extends to bikes, but I don't see why it couldn't be a "bagage volumineux" if it were boxed. Or take some holiday and ride it: it wouldn't be the first time it's been done.
