Spinach with crème fraîche

I have made this twice now and it is a different slant on boring spinach and nice for a dinner party. I am not a measurer and gauge by eye. The measures are as near as I can get.

1 tbspn olive oil
22g smoked lardons
1 clove garlic
Dash ground ginger
450g mushrooms
450g fresh spinach
100g crème fraîche
salt
1 tsp de raz el hanout (Moroccan spice mix)
5 tsp veal or chicken stock
2 tbsp honey

Dice the washed mushrooms.
Peel garlic, slice.
Wash and dry spinach, saute bacon, garlic and ginger in oil over moderate heat.
Add mushrooms, then cook for 4 mins.
Add spinach and and cook until wilted (approx 10 mins).
Add cream, salt,spices and stock.
Add honey and cook for 10 mins on low heat.

Kathy, we love spinach and our simplified version of yours is this.#
If fresh spinach is too expensive, do with the frozen version.


a couple or three cloves of garlic , a small onion or challottes very finely chopped sauted in olive oil , add a handfull of lardons( bacon bits) then add the cooked fresh drained spinach or the drained frozen spinach heat through with the onion /garlic add some cinnamon to taste , twist of salt . leave to cool. Add creme fraich and serve to kids who will not enjoy cabbage or other greens

we usually serve this with pitta bread.

I love spinach and yogurt. Just fry some onions until golden, add the spinach and when cool, stir in yogurt.
