Roast chicken with roast lemon meringue vegetables

Remember, when this new eating experience has spread virally throughout the kitchens of the world, you read it here first.

Yes you read correctly. Roast Chicken with Roast Lemon Meringue Vegetables.

Ingredients
1 chicken
assorted vegetables (eg carrots, parsnips, peppers, onion, garlic)
Oil
1 frozen lemon meringue pie

Method
Prepare chicken and put in roasting tin on top shelf of oven at 190
Prepare vegetables, put in a roasting tin, add oil and stir.
Put vegetables on lower rack half an hour after the chicken,
When the chicken is ready, remove to rest in a warm place.
Ignoring entirely that it isn't quite the same as a pizza, place lemon meringue pie directly on to the top rack of the oven.
After 15 minutes check lemon meringue pie.
Remove tin of roast vegetables and spoon out as much of the lemon meringue pie that has collapsed through the bars of the oven rack and oozed into the vegetables as you can.
Reflect that a bit of sweetening of roast vegetables is not unusual ( eg a little honey or maple syrup), stir the bits of the pie you couldn't get out into the veg and serve with the chicken.

I take it this was not a planned dish!

Who was the drunk that forgot to put the lemon meringue on a baking dish? :lol:

And who drew the short staw to clean the burnt sugar off the oven? :oops: :lol:
