We love a good bottle of wine here at P-O Life, that much is clear. Just don’t ask us to decode anything about “bold structure” or “hints of strawberry on the nose”… if the label’s sexy, it’s going in the basket.
But every now and then, it’s worth listening to people who actually know what they’re doing.
That’s how we came across Les Caves Maillol.
This is a team who won’t just hand you a nice bottle and send you on your way. They’ll tell you why it works, what to eat with it, and probably introduce you to something you wouldn’t have picked yourself but will absolutely come back for. And in France, where even a quick meal somehow turns into a full experience, you can’t really afford to get the wine wrong.
So instead of pretending we’re the experts, we’ll let you meet the people who are.
Guillaume Geniez — The One Who’s Done It All (Head Honcho)

Guillaume has done just about everything there is to do in wine. From growing it to selling it, from communications to business development, and even teaching others along the way, his experience covers the full journey from vineyard to glass.
A former project officer for the CIVR, he brings a rare mix of deep knowledge and real-world experience to Caves Maillol. The kind of person who can guide you without over complicating things, and make you feel like you actually understand what you’re drinking.
Emilie Corominas — The Creative with Impeccable Taste (Perpignan Store)

Caviste and graphic designer, and genuinely brilliant at both.
Emilie has a real talent for understanding what people are looking for, even when they’re not quite sure themselves. Whether it’s pairing a wine perfectly with a meal or designing a tasting sheet from scratch, she brings both creativity and precision to everything she does.
Tell her what you’re after and she’ll find the bottle. Simple as that.
Guillaume Prévost — The Enthusiast (Perpignan Store)

Guillaume joined the team in 2024 after graduating top of his class at the École Supérieure du Vin, and he’s brought that same energy straight into the shop.
He has a way of making wine feel approachable while still knowing his stuff, which is exactly what you want when you’re trying to choose something new. On top of that, he has a real passion for spirits, so if you’re in the mood for something a little different, he’s definitely the one to speak to.
Lucas Roman — The One Who Nails the Pairings (Argelès Store)

Lucas Roman is the caviste at Caves Maillol Argelès, and the one you’ve probably already seen on Instagram. A graduate of the École Supérieure du Vin in Perpignan, he’s involved in everything from tastings to the cave’s video content.
A self-confessed food enthusiast, he has a real passion for food and wine pairings, from the classics to the more unexpected, spirits included. Fair warning, if you walk into the Argelès shop and hear country music, that’s him. And after years of championing reds, he’s quietly starting to come around to whites… but we’ll keep that between us.
A Final Word (Before You Pick Your Next Bottle)
At the end of the day, what makes Les Caves Maillol stand out isn’t just what’s on the shelves, it’s who’s behind them.
This is the kind of place where you can walk in with absolutely no plan, have a quick chat, and walk out with something you’ll actually enjoy… and know what to eat with it too. No overthinking, no pretending you understand tasting notes, just good wine and people who know how to guide you in the right direction.
