Food for Thought with Suzanne Dunaway

Potato salad

Whether you are celebrating or just want to eat something quick and delicious, this potato salad can be made in 15 minutes. I love the potatoes of France, so many different kinds for so many different dishes, but I used 4 medium-sized new potatoes, cut in thin slices and simmer for 15 minutes in salted water.

Ingredients

  • 4 medium-sized new potatoes, sliced
  • 1 sweet onion, chopped fine
  • 2 stalks celery, chopped fine
  • 2 hard-boiled eggs, sliced
  • Fresh coriander, chopped fine
  • Fresh parsley, chopped fine
  • A sprig of lemon thyme, chopped fine (optional, basil is good, too)
  • Mayonnaise to bind
  • 1 large spoon of moutard anciennne
  • Optional ideas: chopped fresh cucumber, olives, crushed almonds, the list goes on….

Method

Put the sliced potatoes in a deep bowl and add the remaining ingredients.

Blend well with a spatula to break up potatoes, but do not overmix.

Add salt and pepper to taste and a squeeze of lemon.

Chill and eat.

You may, of course, add anything you like in salade de pommes de terre, but I like it simple.
