Smashed potatoes….

  • Boil 8 small new potatoes until tender.
  • With a heavy object or mallet gently mash them into little flower shape. They will do that automatically!
  • Mix olive oil, pressed garlic, and lemon juice with salt and pepper and brush each flattened potato liberally.
  • Sprinkle with sweet paprika and bake at 185 for 20 minutes or brown under the broiler until crisp on the edges.
  • Wonderful, too, for a little aperos addition with crême fraîche or greek yogurt.
