Gin & Prosecco Cocktail

A Little Glass of the P-O
Bottle a little bit of summer in a glass. Whip up a couple of these cocktails, find somewhere with a good view (preferably one of those fabulous P-O views), and sip slowly. If you’re not actually here in person, simply close your eyes and pretend you are — the Pyrenees, the sunshine and the cicadas are all included, at no extra charge.
Ingredients
- 50ml gin (or whatever measure feels right 🙂
- Plenty of sprigs of fresh mint
- Slices fresh cucumber
- Elderflower cordial or liqueur
- Tonic/lemonade/Prosecco (Cava)
- Thin lemon slices to garnish
- Ice
Method
Crush the mint and some of the cucumber pieces in the bottom of a cocktail shaker or glass jug, and stir, squashing down the with the back of a spoon to release their juices.
Add a dash of elderflower cordial and the gin.
Fill up with Prosecco (or cold tonic/lemonade).
Garnish with more mint and lemon, close your eyes, and imagine you’re in the Pyrénées-Orientales!
